02 Apr RECIPE – BLUEBERRY AND CHOCOLATE MUFFINS
DAIRY FREE GLUTEN FREE PALEO FRIENDLY
Organic ingredients are recommended but go with what is accessible to you.
Everyone needs staple go to healthy treat that takes literally no time to make!
These are SO simply to make and incredibly versatile… you can add any berries you wish or even throw in a few bananas for that added potassium.
Here’s the recipe;
Mix together….
4 cups of almond meal (or one 400g bag of ‘Lucky’ Almond Meal – from Coles or Woolworths)
4 large eggs
1/2 cup coconut oil (go the cooking coconut oil from the Coles health aisle section)
1/2 raw honey (raw is BEST)
2 tablespoons of vanilla essence
1 teaspoon of baking soda
2 teaspoons of apple cider vinegar
1 pinch of himalayan pink saltBlend in your food processor until smooth!
If you want to make some banana muffins – simple add 3-4 Bananas and and a little extra almond meal to the mix and blend.
Remove mixture and place into glass bowl…..and then add;
1 cup of blue berries (or raspberries, mixed berries)
1/2 cup of chopped 70% or higher Dark Chocolate
Mix and then spoon into 10 large muffin liners – I use the Muffin liners from Coles as they don’t stick to the muffin once cooked!
Bake for 20 mins at 180 degrees until the middle bounces back at the touch.
Enjoy! Eat one when you pull them out of the oven – SO GOOD!
